
The coconut/lime combination is no longer in doubt: it’s just IDEAL!
Last year I tested the version coconut / mascarpone icing, but I admit that with the Phildelphia the result is even better because it is smoother and more melting.
Here is the recipe for 14 cupcakes:
Coconut / lime cake base
- Preheat the oven to 180°.
- Beat 2 whole eggs with 125g of caster sugar.
- Add 50g of butter (previously melted), 125g of flour with yeast incorporated (Francine type) and mix well.
- Then add 20 cl of coconut milk, 75g of grated coconut, as well as the zest and juice of 1 untreated lime.
- Place the muffin cases* in the muffin pan and fill 2/3 full with this batter.
- Cook for 20 minutes.
- Set aside until completely cooled.
Coconut & Lime Cream Cheese Icing
- Beat 300g of Philadelphia cream cheese (2 boxes) in a mixer, then add 200g of icing sugar and beat again.
- Add the juice of 2 limes and 50g of grated coconut (you can add more juice to accentuate the tangy side but be careful, this liquefies the icing!).
- Fill a piping bag with this icing and refrigerate for at least 1 hour before decorating the cupcakes.
To be enjoyed without waiting for them to melt like snow in the sun...

A question about this recipe: do you recommend turning up the icing at the last minute? Or is it possible to do it (after placing the icing for 1 hour in the fridge) and putting the cupcakes back in the fridge?

Hello Laurie, for this frosting containing mascarpone, you can put the cupcakes back in the fridge, they will be just as good! (compared to a butter frosting which hardens...). See you soon
