A traditional recipe brought up to date by a great pastry chef, do you like it?
This is what I suggest you discover today, thanks to the cookbook 'Sugar Free' by Christophe Felder for Canderel.
Among the different (and superb!) recipes offered in the book, there is this famous rice pudding.
Ok... Rice pudding is rice pudding.
BUT rice pudding BY Christophe Felder, it still throws a little more!
Especially if the latter chooses to twist the original recipe by adding passion fruit caramel... Not bad, right?
Here is the recipe from the book and below I have a little gift in store for you!

Rice Pudding - Passion Caramel (4 pers.)
- Make the custard:
Bring 15cl of skimmed milk to the boil with 1 split and scraped vanilla pod. In addition, whisk 2 egg yolks with Sucralose® (3g) or caster sugar (30g). Pour the boiling milk over the egg yolks and return everything to the saucepan through a strainer. Cook over low heat, stirring constantly for 5 minutes until the cream coats the spoon. Transfer to a cold container and set aside.
- Make the rice pudding:
Heat 50cl of skimmed milk with Sucralose® (3g) or powdered sugar (30g). Add 125g of round rice and bring to a boil. Lower the heat and add more Sucralose® (3g) or powdered sugar (30g). Bake 35-40 minutes. Let cool.
Whip 8cl of whole liquid cream in whipped cream with Sucralose® (2g) or powdered sugar (20g). Then fold into the cooled custard. Mix everything into the cooked rice. Divide into ramekins and refrigerate.
- Make the passion fruit caramel:
Reduce 100g of passion fruit juice and 50g of orange juice in a saucepan over high heat, with Sucralose® (5g) or caster sugar (50g) until caramel forms, about 5 minutes.
Garnish the top of the ramekins with passion fruit caramel and serve immediately...

This recipe book is indeed surprising. Making pastries/desserts from Canderel is amazing.
For my part, I like all desserts, yes, I am lucky to be part of a family of pastry chefs...
For me, a dessert must be seasonal, so in summer nothing better than a strawberry shortcake, but a lemon meringue tart is just great. In winter I like to enjoy an opera or even a delicious and creamy Paris-Brest. In fact, I can happily describe all the desserts, but the one that remains engraved in me is the Reims.
Few people know this dessert, since it is a creation of my uncle that my brother also makes.
Reims is a light and sparkling Champagne-based device on a fine sponge cake. It includes seasonal fruits (strawberry, raspberry, peach). the Reims is covered with a fine caramelized meringue, and decorated with fruit (apple / mango / redcurrant). This cake is both rich in flavor but very light.

The last one that I really liked and very simple to make is the Catalan cream.
I don't have much time, and this is a quick and delicious dessert to make, which I can't do without now.
