My current craving: cupcakes that have the flavors of my favorite cocktails...
Piña Colada style, or rather "virgin" Piña Colada, since I didn't add rum.
These cupcakes are particularly fragrant since they combine a soft cake flavored with coconut and pineapple, a heart of mixed pineapple, and a creamy coconut frosting...
I will transport you to the Tropics!

- 120 g soft butter, melted
- 1 whole egg
- 1 Egg yolk
- 150 g light brown sugar
- 120 g pineapple juice
- 120 g coconut milk
- 1 tsp liquid vanilla extract
- A few drops of coconut flavor
- 190 g of flour
- 1,5 cc of baking powder
- a pinch of salt

- 120 g pineapple in syrup
- +
- 150 g by Philadelphia®
- 250 g of mascarpone
- 1 tsp liquid vanilla extract
- A few drops of coconut flavor
- 150 g icing sugar
- Cake base: preheat the oven to 180 ° c traditional heat. In a bowl, combine the whole egg and the yolk, the brown sugar, the pineapple juice, the coconut milk, the liquid vanilla extract, a few drops of coconut flavoring, then the melted butter. In another container, mix the dry ingredients: flour, baking powder, salt. Incorporate the liquid ingredients into the dry ingredients in several batches (mix well in each). Place cupcake boxes in a rigid muffin pan, then line the boxes with the dough, no more than 3/4. Bake for 23 minutes, the top should be golden.
- Pineapple heart: drain the pineapple and put it in a blender. Hollow out each cupcake by hollowing out the heart (but keeping the hat!) And garnish with mixed pineapple. Put the hat back on each cupcake.
- Creamy coconut frosting: In the bowl of the food processor, combine the Philadelphia® and mascarpone. Add the vanilla and a few drops of coconut flavoring. Gradually incorporate the icing sugar. Whisk until you obtain a homogeneous and smooth mixture. Line a pastry bag with this icing and decorate the cupcakes.

I didn't succeed with the cream, it remains too liquid, too bad. I tried to put it in the freezer, it doesn't work.
I have tried this recipe 4 times already and each time I have been told that these are my best cupcakes. They are delicious. The frosting is sweet, wonderful.
I hate coconut in general except in savory dishes but this is the only pastry I eat with grated coconut as a topping.
