
This season, what could be better than a nice outdoor picnic to celebrate a birthday? We set up a small white tablecloth, we arrange wooden cutlery (so green!), small polka dot napkins, colored plastic glasses, pretty matching straws... But the most important thing is missing, you might say, the birthday cake? Here it takes the form of delicious lime & mint mojito cupcakes.
These mojito cupcakes are very fragrant and very light, perfect to enjoy in summer.
An individual birthday cake is easier to transport and, above all, you don't have to bother cutting it (that saves time when tasting it, doesn't it...).

- 140 g soft butter
- 130 g brown sugar
- 2 eggs
- Some fresh mint leaves
- 2 tbsp lime juice + zest
- 130 g of flour
- 1 tsp baking soda
- 2 tbsp of milk
- +
- 300 g of mascarpone
- 80 g icing sugar
- 60 g whole cream
- 1 tbsp lime juice + zest
- Preheat the oven to 180 ° traditional heat.
- In the bowl of the food processor, beat the butter and sugar. Then add the whole eggs one by one. Chop the mint very finely and add to the preparation with the lime zest and juice. Sift the flour and baking soda then add to the dough, little by little while mixing. Finish with the milk. Pour the dough into cupcake boxes previously placed in a muffin tin. Bake for about 20 minutes. Let cool on rack.
- Prepare the icing by whisking in a food processor the mascarpone, icing sugar, whole crème fraîche and lime juice until a firm consistency is obtained. Line a pastry bag and frost the cooled cupcakes. Sprinkle with zest for decoration.
