A melting and comforting recipe: Chocolate crinkles ! Under their snowy coat, we discover small cakes with a rich and tender cocoa texture. A delicacy straight from the United States, very easy to reproduce at home! Ideal to prepare for the end-of-year celebrations but not only...
What you'll love about this crinkles recipe
- flavors : the comforting taste of chocolate like in a brownie but in an individual biscuit version. The brown sugar and vanilla make them even more delicious!
- texture : half cookie, half cake, they are as soft as you want!
- difficulty level : they are very simple to make, you just have to remember to prepare the dough the day before to give it time to take consistency (this is essential). Cooking is quick, and the visual result is like snow-covered cookies!

A few details on the ingredients
- all-purpose flour : I use T55 for this crinkles recipe.
- bitter cocoa : this is the key ingredient, choose bitter (without sugar). I take Van Houten in supermarkets.
- sucre : I make a mixture of brown sugar and powdered sugar for their complementary properties.
- vanilla : it is a flavor enhancer that perfectly highlights the taste of cocoa.
- icing sugar : this is what gives the snowy effect to cracked cakes.
How to make crinkles?
- We mix the dry ingredients together
- We mix the wet ingredients apart
- We incorporate dry ingredients in wet ingredients
- We cool the dough (refrigerator or freezer) several hours
- We form balls of dough
- We roll them generously in icing sugar
- We place these balls on a baking tray
- We bake !
NB: the complete list of ingredients and the detailed recipe are given at the bottom of the page.

My tips for making perfect crinkles at home
- the dough resting time is mandatory! Otherwise it is impossible to work with it because it is basically a cake batter... You can either leave it in the refrigerator overnight or speed up the process a little in the freezer as I specify in the recipe.
- use an ice cream scoop to scoop out the batter : it’s easier and allows you to dose each ball equally.
- the more we coat with icing sugar, the clearer and more visible the cracking will be once cooking is finished.
- don't worry if the crinkles are soft at the end of cooking, as long as the edges hold, it's good!
How to store chocolate crinkles?
These crinkles can be easily stored at room temperature, in an airtight container for About 4 days. They will keep a little longer if you place them in the refrigerator.
For the end of year celebrations, you can also offer them as a gourmet gift to your loved ones. In addition to being good, crinkles are also very pretty with their snow-white coating!

- 200 g flour T55
- 70 g unsweetened cocoa powder
- 1,5 cc baking powder
- 0,5 cc salt
- 160 g light brown sugar
- 40 g granulated sugar
- 85 g sunflower oil or other neutral tasting oil
- 3 medium size eggs
- 2 cc natural vanilla extract
- 80 g icing sugar for decoration
- In a bowl, mix the dry ingredients: flour, yeast, cocoa, salt.
- In a separate bowl, mix the two sugars, the oil and the vanilla. Add the eggs and beat for 2-3 minutes.
- Pour the dry ingredients into the wet ingredients in three batches, mixing until no more flour is visible (do not mix more than necessary).
- Cover the container and place it in the refrigerator overnight (or at least 5 hours) OR in the freezer for about 2 hours. The dough should thicken a little.
- Preheat the oven to 175 ° traditional heat.
- Using an ice cream scoop, take portions of dough (about 16-18 in total) then quickly form balls with your hands (it's very sticky but that's normal, you can use a thin glove or regularly run your hands under cold water).
- Quickly roll each ball in a bowl containing icing sugar to coat (the more icing sugar, the more the cracked contrast will be seen on the crinkles).
- Place each ball (spacing them well) on a baking sheet covered with baking paper. NB: if you are making several batches in succession, put the rest of the dough back in the fridge while you wait.
- Bake for 9-11 minutes, the time will vary depending on your oven. The edges of the crinkle should hold, the center should be soft.
- Then let the crinkles cool for about 5-8 minutes on the baking sheet then place them on a rack until completely cooled.

They are beautiful like all your crackles!
Hello Sahar, we can make about XNUMX crinkles as indicated in the recipe. See you soon ;)
Hello Myriam, the sugar helps counterbalance the bitter cocoa and add softness to the recipe. You can totally reduce if you want. See you soon :)
Good morning! Can we replace bitter cocoa with dark pastry chocolate? If so what would be the amounts of sugar and chocolate then?
Hi Lexi, I don't recommend it because it would involve changing a good part of the recipe (including changing the oil for butter). So it would be a completely different recipe. See you soon :)
Ideal recipe for the holidays! All my guests enjoyed it and the cookies are not dry at all :) I used an ice cream scoop to form the balls because my dough stuck too much to my fingers. As indicated in the preparation, let the cookies rest well so that they do not stick to the plate, especially since the icing sugar is still very volatile after cooking. A recipe to make and remake without hesitation. Thank you Lilie!
Thank you very much for your feedback Raphaëlle, I am delighted that you like these crinkles :) See you soon
But what a blog! The best! I have tested a lot of very very good things. I can't wait to make the crinkles! Thank you very much!
Thank you very much Suzanne! What a nice compliment! I hope you like these crinkles too! See you soon :)
Hello, is it possible to put only 150g of sugar please? Thank you
Hello, so given the quantity of bitter cocoa, I advise you not to reduce the sugar so much, otherwise it will be inedible (too strong in cocoa) and it would change the texture a lot too... See you soon :)
Great recipe: easy and quick to make, my children loved it so much that they ate the whole batch in one day... and they asked me to make it again!
Thank you very much Valerie! If your children loved it, that's great! See you soon :)

Can they be kept in the freezer? If so, for how long?
Hello Anna, yes you can freeze them by separating them well with baking paper in an airtight container. See you soon :)

Bravo
Oh great! Thank you very much Cécile for your feedback! See you soon :)
Very good and easy to make!
However, my crinkle cookies are very soft, even though I followed the recipe carefully and let them cool after baking. Should I bake them longer?
The thank you box
Hello Alice, thank you! If they are too soft without consistency, it is because you took them out of your oven too early, the duration depends on each person's equipment (or not left to cool enough on their baking sheet). Be careful, a crinkle is not a crispy cookie, but a kind of biscuit that is melting inside, like a brownie. See you soon :)
excellent recipe, just follow the instructions carefully. success guaranteed
nothing too complicated, within everyone's reach
Visually, these crinkles are awesome!! And taste-wise, I can tell you...
