
Who said the end of winter had to be depressing in the kitchen? Even if we all dream of seeing the good weather strike at the tiles, there is always a way to have fun by preparing good comforting dishes / desserts (it will pass faster, yes).
At weekend breakfast time, I love crepes and pancakes (and I'm not the only one at home!). They can be accommodated in so many different ways: butter, jam, oilseed puree. Today, I'm offering you an ultra-gourmet variation that looks more like a dessert / snack than a breakfast: Matcha tea pancakes, bananas, chocolate sauce.
By preparing this recipe, I was able to test a new accessory from the KitchenAid range, which can work with all the brand's pastry processors: the Sieve & Balance 2 in 1.



Why use this accessory?
To sift the dry ingredients in order to remove the pieces: in fact, this allows your preparations to be softer, lighter, lumps are also avoided, especially in preparations such as pancakes, pancakes, madeleines, financiers, macaroons, sponge cakes ...
How does it work?
We attach the accessory to the front of the robot, we install the modules (chute, scale, hopper) and we can start pouring our flour or icing sugar for example. The amount of flour needed is calculated using the electronic scale. Then we start the robot, which begins to sift little by little the contents of the sieve which then goes down into the bowl of the robot thanks to the dedicated spout.
The little extra: the scale also works independently as an electronic bench scale (accurate to the nearest gram). It can therefore be used to weigh the other ingredients of the recipe (solid / liquid ingredients). And we know that in baking it is better to be rigorous in weighing ... Personally, I never leave it, it does not take up much space in my kitchen.
Coming back to my recipe of the day, these little green pancakes, I loved combining matcha and chocolate, especially if it is not too full-bodied, like the one I usually use in baking. The bitterness of the matcha balances perfectly with the chocolate. Matcha lovers can even increase the dose given in the recipe. And bananas are also a treat (and those from the West Indies are currently in season).
So the beautiful stack of pancakes is yours! And a tip: don't hesitate to be generous by coating them with chocolate sauce;)


- 350 g all-purpose flour
- 2 cs baking powder
- 2 cs matcha tea powder
- 110 g brown sugar
- 2 eggs
- 50 cl milk
- 80 g soft butter, melted + a little for cooking
- 1 tsp liquid vanilla extract
- Pinch of salt

- 140 g dark chocolate pastry not strong
- 140 ml cream
- 1 or 2tbsp hot water
- +
- 1 banane
- 1 creamy yogurt
- Sift the dry ingredients into a bowl: flour, matcha tea, baking powder and salt.
- Apart from mixing the eggs, milk, melted butter, brown sugar and vanilla.
- In the bowl of dry ingredients, gradually (in batches) pour the liquid ingredients, mixing well between each addition to avoid lumps.
- Heat a crepe maker or pan with low / medium heat with a little butter. Using a small ladle (I use a 60ml graduated cup, I give you the link at the bottom of the article), place a dose of dough in the center of the pan, turn the pancake as soon as small bubbles form on the surface. Continue cooking for a few moments on the other side then place on a plate.
- Repeat the operation for the rest of the dough (it is possible to make several at the same time if you have a large pan).
- Prepare the chocolate sauce: heat the cream in a saucepan. As soon as it boils, pour over the chocolate cut into pieces, smooth everything well. Add 1 or 2tbsp of hot water to make the sauce more liquid to coat the pancakes well.
- Before or after pouring the sauce, you can decorate your pancakes with a little stirred yogurt, banana slices ...
* big matcha lovers will of course be able to increase the dose of matcha powder :)
